Ginger Prawns With Coconut Milk


Ingredients:

Combine in:

1 Kilo Prawns
1 - 2  can coconut milk
1 pc. broth cube ( Maggi cube )
1 tablespoon fish sauce ( patis )
1 thumb ginger ( luy-a ), sliced
4 cloves garlic, crushed
2 pcs. Medium sized onions, sliced
1 stalk Lemon grass / Or: tanglad ( Or: Lemon Powder )
1 pc. red hot chilli, sliced ( Optional )
8 pcs. black  whole pepper, crushed
½ teaspoon Salt

Cooking Procedure:

Wash Prawns.
Combine all ingredients and put in a pot.  Simmer for 45 - 60  minutes or until sauce is thickens. Stir occasionally. Correct seasoningServe with rice

Pork Medallon Cream Sauce


Special Menu for Dinner:


Ingredients:

800 grams  - 1 Kilo  grams pork medallon, cut into flatten
7 - 8 pcs. American Bacon

4 pcs. medium cooked potatoes ( Or: Knödel half und half )

4 tablespoon butter or olive oil

Marinate Mixture:
2 tablespoon lemon Juice
½ teaspoon garlic flavour
½  teaspoon nutmeg powder / Muskatnuss powder
½ teaspoon paprika powder
1/8 teaspoon Koriander powder
1/8 teaspoon dried basil / dried basilicom
2 - 3 tablespoon mustard ( Senf )
½  tablespoon olive oil
1/8 teaspoon pepper
A dash of salt to rub into meat / or you can use Vegeta as a substitute for salt. ( optional )

Procedure for Beef Medallon:

Prepare Marinade by combining marinate mixture. Then add beef into mixture and rub gently.
Then roll bacon into beef seal with toothpick. Let stand 15 minutes.
Melt butter in a skillet, or olive oil. Drop in slices  beef medallon and  let it cook until done.


Garnishing:
Tomatoes, sliced
Cucumber sliced
Red radish sliced
Lemon, sliced ( Zitrone )

Serve with:
Plain rice
Knödel half und half or  Cooked potatoes

For Mushroom Sauce:

500 grams - ½ Kilo Mushrooms

1 tablespoon olive oil or butter
2 cloves garlic, minced
1 onion, sliced
1 can cream fraiche, ( Nestle Cream )
50 grams Rahm sauce, dissolved ( Optional )
1 tablespoon worcestershire sauce
1 broth cube or 1 teaspoon Knorr seasoning
1 ½ Cup broth stock or water, add more broth or water  if desired
½  teaspoon dried Thymian
1/8 ground black pepper powder
Salt to taste

Procedure for Mushroom Sauce:

Wash and cut mushrooms into half and drain.
Saute garlic and onions in olive oil.
Add mushrooms, and broth stock. Stir  occasionally.
Then add cream fraiche,  Rahm sauce, broth cube, worcester sauce and Thymian.  Allow to  simmer  4 minutes or until mushrooms sauce is thicken.
Season with salt and pepper.
Correct seasoning and serve with  Pork Medallon.


For  Cooked Potatoes:

4 - 6 pcs. raw potatoes, medium sized
½ teaspoon cooking oli.
½ teaspoon salt
Water for cooking potatoes

Procedure for  Potatoes:

Boil raw potatoes in water.
Add cooking oil, and salt. Cover and simmer for 25 minutes or until tender.
When potatoes is done, Peel the skin  and serve with Pork Medallon

Baguio Beans Rolled in American Bacon

500 grams Baguio Beans

100 grams breakfast Bacon ( American Bacon ) ( Or: Blackforest Bacon - German Bacon - “Schwarzwälder Schinken’’ )
2 tablespoon mustard ( Senf )

4 - 6 tablespoon Butter or cooking oil for frying.

Procedure for Baguio Beans Rolled in Breakfast Bacon :

Ang baguio beans ay hugasan at  tanggalin kaunti ang bawat dulo niya.
Magpakulo ng tubig at ilagay ang baguio beans. Pakuluan hanggang 4 minuto, O  kapag medyo malambot na at hindi masyado lutong-luto, katamtaman lang ang lutong niya.
Pagkatapos ay hanguin at buhusan kaagad ng malamig na tubig at patuyuin at itabi.
Ang bacon ay ilatag sa malapad na plato lagyan ng mustard ikalat lang siya para magpantay tsansahin nalang ang paglagay huwag masyado marami at magkuha ng 6 - 8 piraso na luto na baguio beans at ilokot sa bacon.
Pagkatapos ay ipiritu sa butter o sa cooking oil, hanggang maging golden brown ang kulay niya. Babaligtarin lang para magpantay ang luto niya.

Pork In Honey Woodsmoke flavour

Pork In Honey Woodsmoke flavour 

Ingredients:

½ Kilo Pork boneless
2 teaspoons woodsmoke flavour(Mild BBQ sauce )
½  teaspoon ground black pepper
1 teaspoon Paprika powder
1/8 teaspoon dried basilicom
1 teaspoon oyster sauce
½ teaspoon dried basilicom
1/8 teaspoon dried Thymian
A dash of salt to taste
3  tablespoons melted butter
1 teaspoon *Garlic Olive Oil Dressing Mixture**

Cooking Procedure:

Mix  all ingredients into pork and marinate for 15 - 30 minutes.
Fry pork marinate  in 3 tablespoon melted butter, fry until done.
Correct seasoning. 

Serve with Pommes | French Fries

Garnishing:  cucumber sliced, red radish.

Bread in Plum Sauce ( Pflaumen Sauce )


Ingredients:

For Bread Dough:

500 grams Flour
¼ Liter milk or 1 glass milk
2 tablespoon sugar
30 grams fresh yeast or 15 grams dry yeast
1 egg - beaten
100 grams melted butter
1 teaspoon salt

Procedure:

Ang flour ay ilagay sa bowl. Ang milk ay painitin kaunti at ilagay sa malalim na bowl at ihalo ang asukal at ang yeast. Pahaluin lang at ibuhos sa gitna ng harina. Halu-haluin lang sila ng maigi.
Isunod ang itlog at ang 80 grams na melted butter at asin. Masahin lang sila ng mabuti.
Kapag wala ng harina na dumidikit sa bowl ay patubuin 30 - 40 minutes.
Takpan pagkatapos ay e-porma ng belog 12 - 14 ka piraso, at patubuin uli 20 - 30 minutes.
Ang natira na butter ay ilagay sa baking pan, ikalat lang. Ang ginawa na bilog na dough ay ilagay sa baking pan.

For Bread Sauce:

1 tablespoon melted butter
¼ Liter milk or 1 glass milk
2 tablespoons honey

Proceudre for Bread Sauce:
Ang para sa sauce ay 1 kutsara na butter, ang milk at ang honey ay paghaluin at painitin sa mahina na apoy.
Kapag mainit na ay magtabi ng ( 1 ) isang kutsara na sauce mixture. Ang sauce ay ibuhos sa dough na nasa baking pan, ikalat lang siya. Ilagay sa oven at e-bake 40 - 45 minutes hanggang maging golden brown.
Ang ( 1 ) isang kutsara na sauce na itinabi ay ilagay or e brush sa golden golden brown na dough na malapit ng maluto, ilagay  isang minuto bago hanguin sa oven ang bread.

For Plum Sauce ( Pflaumen ):

100 grams brown sugar or white sugar
4 tablespoons water
1 stalk cinnamon
500 grams Plum

Procedure:

Ang asukal, tubig, at 1 stalk na cinnamon ay pakuluin.
Ang Plum ay hugasan, ang liso ay tanggalin at ilagay sa sugar water mixture, pakuluan isang beses at hanguin.
Ang Juice niya ay pakuluan, at ibuhos sa Plum.

At e serve kaagad kasama ang Bread at ang Plum Sauce.

Preheat Oven:    180°C - 200°C
Gas:            3 - 4

Time:            40 - 45 minutes
