Potato Salad and Crispy Pork Belly

Potato Salad Recipe:

1/2 kilo Potatoes - Cooked, peeled and mashed.
For Dressing: Mix all ingredients
1 onion, sliced into cube very fine
1 teaspoon salt
1 teaspoon white sugar
2 teaspoon knorr seasoning
1 teaspoon ground black peper
1 tablespoon maggi sauce
2 tablespoon Vinegar
2 tablespoon salad oil
1 cup hot water
1/2 tablespoon fresh parsley and basilicom - Optional 
 
Procedure:
Combine all the ingredients and pour into mash Potatoes. You can add more ingredients according to your taste. 
 
Garnishing: Fresh Parsley or Basilicom
 
For Pork Belly:
Season with Paprika powder salt and pepper and fry it. Deep fry or put in an Oven. Or Grill it.

Steamed Rice Cakes | Puto

 








 

 

Ingredients

  • 1 cup cooked rice

  • 1 cup water or evaporated milk

  • 1 – 2 teaspoon pandan flavour

  • 2 eggs

  • 2 cups coconut milk or 1 can coconut milk

  • 2 cups rice flour

  • 2 – 3 teaspoon baking powder

  • ½ teaspoon iodized salt

  • ½ cup white sugar plus 4 tablespoon. Adjust the sugar according to your taste.

Toppings: ( Optional )

Cheese cut into slices (Optional)

Instructions 

1.     Preheat your steamer over medium heat on the stove.

2.      In a medium mixture bowl add the cooked Rice, Sugar, Evaporated milk, Eggs and Pandan flavour. Blend in a food processor or in a blender for about 4 - 6 minutes. Set aside.

3.      Sift the rice flour and baking powder. And put in in a medium mixing bowl; add the coconut milk until fully incorporated. Use the whisk to mix all the ingredients together.

4.      Pour the cooked rice mixture into the batter and mix to combine.

5.      Scoop the puto mixture into mini muffin molds to about ¾ of the way up. Makes 24 pieces. Place the molds into the steamer and cover with a lid.

6.      Steam for 12 – 15 minutes and remove the lid to see if the puto is fluffy and firm.

7.      ( THIS IS ONLY OPITONAL) If you would like to add cheese, cut the cheese into small ½ inch slices and place on top of the puto. Cover with the lid and allow it to melt for about 45 seconds. Remove when the cheese has slightly melted.

8.      Remove the puto from the steamer and let sit in the molds for 45 seconds to cool before removing them from the molds. Serve hot and enjoy eating Steamed Rice Cakes | Puto

Grilled Marinated Whole Chicken

 


Ingredients:

1 whole chicken

 In a mixing bowl combine:

2 tablespoon lemon juice

1 teaspoon garlic powder

½ teaspoon allspice or ½ teaspoon ground black pepper

2 teaspoon salt

1/8 teaspoon nutmeg

1 tablespoon paprika powder

1 Onions sliced

6 cloves garlic crushed

  

Procedure:

  1. Rub the chicken with the mixture.
  2. Let the chicken marinate in the refrigerator for at least one hour or up to overnight.
  3. Place chicken in a large pot with the marinade sauce.
  4. Cover pot and bring to a boil. Reduce heat and gentle boil for 30 – 40 minutes. Remove chicken from the pot.
  5. Set aside some of the marinade sauce use it as a sauce or baste it to the chicken while it is inside the oven this makes the most flavourful chicken.
  6. Enjoy your meal

DO YOU HAVE FLOUR AND ONE EGG?  DO THIS! NO PIZZA SAUCE NEEDED!

 

NO PIZZA SAUCE! Mayroon ka HARINA at  Isang ITLOG? Gawin mo ito!

Ingredients:

500 grams flour (1/2 Kilo) - all purpose flour

1 pack dry yeast ( 7 grams )

1 tbsp. white sugar

1/2 cup lukewarm fresh milk 1, 5 %

1/2 cup lukewarm water

1 tbsp. olive oil

1 egg

1 tsp. salt

 

Toppings:

100 grams cheese

100 grams Ham 

Extra:

1 – 2 tbsp. Olive oil

 

Mix Lukewarm water sugar and dry yeast

set aside for 10minutes

In a mixing bowl, add flour, eggs, salt, fresh milk, yeast

and olive oil. Mix well…Mix very well...We don't need mixer

Or kneading the dough. Cover it with kitchen wrap

Let the dough rise for about 30 - 45 minutes at room temperature.  after 30 - 45 minutes

(45 minutes later...)Put the dough on a lightly floured surface. 

Divide into two portion.  Flatten with your finger, make it into round shape. Stretching it out from the center outwards. Put it on the pizza baking pan with parchment paper. 

Set aside the other portion of Pizza Dough. If you want to use it the next day, put it in a refrigerator. You can use any kind of toppings. Put on your favorite pizza toppings.

 

Let's do the toppings; Ham and Chesse.  1 – 2 tbps.Olive oil

Punch some holes in the dough with a fork to let the air escape while the pizza is in the oven.

Put on your pizza sauce of choice, but I prefer to use extra virgin Olive Oil in my own version! Put on first the Ham on top.

 Bake the pizza in oven

at 400 - 450° F for about

20 minutes until the crust

is light brown.

 

Or:

Preheated oven to 180°C

Bake: 20 minutes

 7 minutes before it's done remove it out from the oven and put the cheese on top.

Continue to cook for about 7 minutes until the crust is light brown.

Put it back into the oven and continue to cook for about 5 - 7 minutes or until the cheese is melted.

 My own version of Pizza is done!

Carrot Salad with Hard-Boiled Egg


Ingrediends:

4 eggs hard boiled cut in half

1 small Carrots (grated)

1 Cucumber sliced

2 pcs. Tomatoes sliced

1 small red onion sliced

Dressing:

2 tablespoon extra virgin oil

1 – 2 tablespoon Apple cider vinegar

2 teaspoon Dijon mustard

1 teaspoon Honey, raw | or: 1 teaspoon white sugar

Parsley or Scallion

Salt and pepper to taste. 

 
Garnishing: Basilicom

 Instruction:

  1. Boil Eggs
  2. Combine vegetables and toss very well.
  3. combine dressing ingredients and pour over vegetable salad.
  4. Top with boiled eggs.
  5. Garnish with fresh basilicom
  6. Enjoy!

Noodles with Carrots and Grated Cheese

 

Ganito ang gawin ninyo sa Noodles! Kahit anung klase Na Noodles or Macaroni Noodles


Ingredients:

2 tablespoon olive oil

4 cloves garlic sliced

200 grams Ham (schinken sliced)

2 pcs. Onions – sliced

4 pcs. Carrots, sliced

1 ½ glass broth of the noodles (Fusilli)

2 teaspoon seasoning

1 tablespoon Worcestershire sauce (LEA & PERRINS)

½ cup or 100 grams whipped cream (Schlagsahne)

1 pc. Red chilli – sliced

1 – 2 tablespoon Mondamin or dispersed cornstarch.

250 grams Fusilli (Noodles) - cooked

100 grams grated cheese (Emmentaler)

Salt and pepper

 

1.      Heat olive oil in a pan. Brown garlic. Add the sliced ham and Onions. Stir, add carrots, pour in the broth of the noodles 1 ½ glass and add the seasoning.  Simmer 2 - 3 minutes.  Season with Worcestershire sauce.

2.      Pour in whipping cream. Stir for a while. Cover and allow to cook for 2 minutes.

3.      Add red chilli pepper, mix. Cover for 1 minute. Thicken with dispersed cornstarch or mondamin, mix.

4.      Add Fusilli (Noodles). Mix

5.      Sprinkle generously with grated cheese. Cover and continue cooking for 3 minutes without stirring 3 – 4 minutes or until all the broth is absorbed).

6.      Sprinkle salt and pepper. Cover for a while. Garnish with spring onions

7.      Garnish with spring onions.

8.      Finish cooking. Serve hot 

 




Cooking Noodles:

Add 3 cups boiling water cover pan and cook until noodles are tender. Season with salt and pepper.  Cook 10 – 12 minutes. Strain. 

Set broth aside for sauce

How to make Vegetables Ham Cheese Gratin



Ingredients:

  • 4 Carrots – sliced
  • 1 Zucchini – sliced
  • 2 Potatoes – sliced
  • 4 cloves garlic – sliced
  • 1 onion – sliced
  • 200 grams Ham – sliced
  • ¼ cup spring Onions
  • 1 teaspoon Nutmeg
  • 1 tablespoon cooking oil
  • 1 teaspoon spicy seasoning
  • 1 chili pepper ( red ) – sliced
  • 250g Mozarella cheese
  • 200 grms. Crème Fraiche
  • Salt and pepper to taste
  • 1 cup hot water or
  • 1 tablespoon cooking oil

Procedure:

1.      Cut the carrots, zucchini, potatoes and chilli pepper into ½ cm thick slices. Slice the onions, garlic and spring onions.

2.      Slice ham and set aside.

3.      Saute garlic, spring onion in cooking oil until brown. Add the ham and stir.

  1. Add Potatoes then add hot water. Add the carrots, add the crème fraiche and mix well. cover and cook for 4 – 5 minutes until the potatoes is half cook.
  2. add the   spicy seasoning and nutmeg and onions stir for a while and add the zucchini. Add the chili pepper. Season with salt, pepper. Add Spring onions.
  3. The vegetables and ham mixture spoon into Pyrex dish and arrange, then sprinkle with grated mozzarella cheese.
  4. Preheat oven to 180°C – 200°C. Bake the vegetables and ham gratin for 10 – 15 minutes until cheese has melted.

8.      Arrange on a platter and garnish with green spring onion.

9.      Enjoy!
