Ingredients:
1 whole chicken
In a mixing bowl combine:
2 tablespoon lemon juice
1 teaspoon garlic powder
½ teaspoon allspice or ½ teaspoon ground black pepper
2 teaspoon salt
1/8 teaspoon nutmeg
1 tablespoon paprika powder
1 Onions sliced
6 cloves garlic crushed
Procedure:
- Rub the chicken with the mixture.
- Let the chicken marinate in the refrigerator for at least one hour or up to overnight.
- Place chicken in a large pot with the marinade sauce.
- Cover pot and bring to a boil. Reduce heat and gentle boil for 30 – 40 minutes. Remove chicken from the pot.
- Set aside some of the marinade sauce use it as a sauce or baste it to the chicken while it is inside the oven this makes the most flavourful chicken.
