½ kilo Salay-salay fish, cleaned and gutted
10 - 15pieces Okra
Ingredients
• 2 Onions peeled and chopped
• 3 pieces fresh tomatoes sliced
• 2 thumb-size ginger, peeled and sliced
• 2-3 bay leaves
• 6-8 cloves garlic – chopped
• 1 tablespoon fish sauce
• ¼ cup soya sauce
• ¼ cup coconut vinegar
• 1 tablespoon brown sugar
• 1 talespoon cooking oil or Olive oil.
• 1 – 1 ½ cups hot water
• salt and pepper to taste
Instructions
1. Wash fish under cold, running water and drain well.
2. In bowl, combine all the ingredients and place in a pot
3. In Medium heat, cook for about 8 to 10 minutes.
4. Add the fish and cover. Continue to cook for about 20 minutes or cooked through and liquid is reduced.
5. Add the okra and continue to cook for about 5 minutes or until okra softened.
6. Turn heat off then serve with plain rice.
