ADOBONG KANGKONG EASY TO COOK
Ingredients:
• 2 bunch kangkong
• 2 tablespoon cooking oil
• 2 large onion peeled and sliced
• 2-3 tomatoes sliced
• 8 to 10 cloves garlic peeled and minced
• ¼ cup vinegar
• ¼ cup soy sauce
• 2 teaspoon fish sauce (optional)
• ¼ - ½ cup hot water
• Pepper and salt to taste
Instructions:
• Wash Kangkong thoroughly and drain well.
• Trim about 2-3 inches from the kangkong stalks and discard. Cut kangkong into 3 - 4 inch lengths, separating the sturdier stalks from the leaves. In a skillet over high heat, heat oil. Add onions, garlic, then add tomatoes sliced.
• Add vinegar and bring to a boil. Continue to cook, without stirring, for about 5 to 6 minutes. Add soy sauce and water. Bring to a boil for about 2 to 3 minutes.. Season with salt and pepper to taste.
• Add kangkong stalks and fish sauce cook for 2 minutes. Add kangkong leaves and cook for another 2 minutes or until just wilted. Remove from heat and Serve hot.

QUICK AND EASY HOMEMADE PLUM JAM WITH PINEAPPLE JUICE

· 1 kilo ripe plums cut into half (1,000 Grams)
· 1 cup Pineapple Juice
· ½ kilo sugar or preserving sugar (500 grams)
Instructions:
- Combine the ripe roughly plums with sugar and the Pineapple Juice. Mix well and set the pan on medium heat. Let the sugar melt completely and stirring constantly
- Once the sugar has melted, increase the heat and let the mixture come to a boil. Mash the plums a little while mixing during the cooking process
- Continue boiling the mixture for about 25 to 30 minutes or until the bottom of the pan is slightly visible while moving the jam with a spoon or spatula. The jam will be slightly thicker and darker in color
- Switch off the gas, pour this mixture in an airtight jar or glass
bottle. The mixture will get thicker after a few hours. Apply the jam onto
a slice of bread and enjoy.
